Thai-Style Winter Citrus Salad
Ingredients
  • 1 Pomelo, Peeled & Sliced
  • 1 Lrg Ruby Grapefruit, Peeled & Sliced
  • 2 Navel or Cara Cara Oranges, Peeled & Sliced
  • 1 Jalapeno, Thinly Sliced
  • 1 Lrg or 2 Sm Shallots, Peeled & Thinly Sliced
  • 1/2 cup Mint Leaves
  • 1/2 cup cilantro leaves
  • 1/4 cup toasted & chopped peanuts
  • Dressing Ingredients:
  • 1/4 cup lime juice
  • 1/4 cup sesame oil
  • 2 tbsp palm sugar
  • 1 tbsp thinly sliced lemongrass
  • 1 tbsp grated ginger
  • Kosher salt & black pepper to taste
Instructions

To make the dressing:

Add all ingredients to a mason jar, lid and shake the jar for 1-2 minutes, then chill for 30 minutes.

To build the salad:

Peel & slice all citrus and arrange on your platter. Sprinkle with jalapeno , shallot, and fresh herbs, drizzle with dressing. Sprinkle on chopped peanuts and serve.
