Japanese Sweet Potato & Salmon Power Bowl
Ingredients
  • 2 medium Japanese Sweet Potatoes (cubed & roasted)
  • 4 cups Organic Girl Power Greens, divided
  • 2 8oz Cooked Salmon Filets from Westborn Market prepared foods (flaked)
  • 2 cups cooked quinoa, cooled
  • 1 large avocado, sliced
  • 1/4 cup tamari
  • 3 tbsp hot honey
  • 2 tbsp sesame oil
  • 2 gloves fresh garlic, grated
  • 2 tsp chili crisp
Instructions

Preheat Oven To 425°

Whisk together tamari, hot honey, sesame oil, garlic & chili crisp until combined, then set aside.

Place sweet potatoes on a parchment lined sheet tray, drizzle with 1/3rd of the dressing mix & roast for 20-25 min. Remove from oven to cool.

To build bowls: layer quinoa, fresh greens, roasted sweet potatoes, flaked salmon, and sliced avocado.

Drizzle the remaining dressing on the bowls.
