Grilled Wedge w/ Baby Romaine
Ingredients
  • 3 Heads baby romaine
  • 2 tbsp olive oil
  • 1 package small tomatoes
  • 3oz buttermilk blue cheese
  • 6 strips thick cut crispy bacon
  • 1/4 cup chives
  • Dressing Ingredients:
  • 1/3 cup buttermilk
  • 1 5.3oz plain yogurt cup
  • 1/2 cup mayo
  • 2 tbsp white balsamic vinegar
  • 1 tbsp fresh lemon juice
  • 1 tbsp Westborn pub mustard
  • 1 tsp Worcestershire
  • 1/4 tsp granulated garlic
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp sugar
  • 5oz crumbled buttermilk blue cheese
Instructions

Make Dressing:

Add all the ingredients into a mason jar. Put the lid on and shake. Let sit for at least 1 hour.

Cut romaine in half. Drizzle with olive oil and sprinkle with salt & pepper.

Grill romaine cut side down on high heat for 2-3 min or until they begin to char.

Build salad by layering romaine, dressing, bacon, halved tomatoes, and chives.
